Every week, on a bike, on a friday. We collect Lemons as a waste ingredient, with the goal of repurposing them and expressing a flavour which otherwise would’ve been discarded. But be clear, every piece of pith and peel is fresh and has been carefully and respectfully hand sorted, stored, cleaned & caramelised.
We’ve been collecting Lemons from bars in manchester for many months. It has been a journey we chose because we used to take our peel for distillation from various sources far across the globe. We love the globe, but if we can repurpose something delicious from our city then we will.
We’ve been treating them with respect and dehydrating them for a minimum of 48 hrs at 61 degrees. Until they’re dry, and slightly caramelised.
We select specific peel, sorting by hand, checking the moisture content at the right point to make sure the caramelization doesn’t progress too far.
Then we infuse them, adding alcohol, dilution & sugar.
We add sugar to the point that it just barely counteracts the acidity, and lemon bitterness. So if you’d like to taste all parts of the fruit, then for the first time you will.
We set out to make a Manchester Limoncello. We made something much better.
It will taste a bit like a lemonized bittersweet soda , but more complex & honeyed, alongside subtle vanilla smoke & caramel.
You will taste universes of zest.
If you add it to whiskey & drink it over ice you’ll have hacked a whiskey highball for a serious, delicious & refreshing cocktail.
