What is Chicken Wing Liqueur?
Chicken Wing Liqueur is a rich, oily, fat-washed liqueur loaded with the sweet and savoury kick of spicy chicken wings. Made in Manchester at 35% ABV, it’s a collaboration with local dive bar Bunny Jackson’s, distilled for the dirtiest of martinis and spicy margs.
Fat-washing is a bartending technique where fat is infused into a spirit, then chilled and strained out. It leaves a rounder, richer, more savoury and mouth filling body than a normal liqueur or spirit.
The Hot Wing Old Fashioned
- 25ml Mouse Kingdom Chicken Wing Liqueur
- 35ml Mouse Kingdom Coffee Liqueur
- 1 spoon (about a teaspoon) of high-quality chilli oil
Method:
- Add both liqueurs to a rocks glass over a large cube of ice.
- Stir for 20-30 seconds until well chilled.
- Spoon the chilli oil over the top. Let it float and sit on the surface, and don’t stir it in.
Sip through the oil. The first mouthful is aromatic and spicy, and the bittersweet coffee comes through underneath, balancing the spice.
Mouse Kingdom Coffee tastes of milk chocolate, hazlenut and toasted mollasses, and all of those flavours work incredibly well with spice and salt.
Why it works:
- Coffee and chilli are a match made in heaven. Think of mole, spiced chocolate and rubbed steaks. The bitter aromatics of the coffee and the sweetness of the sugar balances and tones the heat.
- The liqueur has savoury depth. That keeps the sweetness from being overwhelming.
- Oil carries heat and aroma. A good chilli oil adds fragrance and a slow burn rather than a sharp sting.
Strength: roughly 1.5 UK units per serving.
Choosing your chilli oil
Ideally use a high quality oil made by a local producer, but Lee Kum Kee works well, and you can find it in the local Co-op.
- Chilli crisp adds crunch and sweetness. Spoon on the oil and a few crispy bits.
- Sichuan-style oil adds numbing, tingly heat and a fragrant edge.
- A clean, smooth chilli oil keeps it elegant and lets the liqueurs lead.
Check the label for allergens such as sesame, peanuts or soy before serving guests.

- Hot honey Old Fashioned twist: add a bar spoon of honey to the glass before you stir (again, making sure the honey is fully dissolved), for a sweeter twist.
- Long serve: pour the stirred drink over ice and top with 60ml cold brew, adding the chilli oil last.
