We've only made 30 x 450ml.
The beans for this coffee liqueur were exposed to a dry anaerobic fermentation period of 72 hours with the pulp on. During this fermentation stage, dehydrated banana was added. The cherries were then pulped and placed to dry on raised beds until ideal moisture content was achieved.
Luz Helena grows this coffee. She grew up in Armenia and has been producing coffee for the last 20 years. She owns Maracay, an 8 hectere farm located at 1450 masl in Armenia Quindio
This microlot is 100% Yellow Bourbon. This varietal is a natural mutation of the Coffee Arabigo. The name Bourbon was given after an island now called Reunion, off the coast of Madagascar.
Heart & graft, Manchester roastery based in Newton Heath, roasted these beans. We infused in our Manchester distillery in Ardwick for 2 months in 60% abv UK wheat vodka. Tasting throughout the process and planning dilution & sweetening.
We've cut it to 30% abv and aimed the sugar content at 180 g / L
Complex & amaroesque with huge acidity and sugary richness. Tropical banana & red berries ready to come out when you say they can. Cut it into a manhattan and add dilution to let the liquid sing.
